Huckleberry Multigrain Pancakes

We just returned from a week at one of our favorite places - Priest Lake, Idaho.  Besides swimming in the lake and playing on the beach, guess what else we like to do while we visit each Summer?  Eat huckleberries, lots and lots of huckleberries.  This year Dad taught me how to tell if they are ripe enough to eat, so I was always on the look out for huckleberries.

One tradition we have while at the cabin is making Huckleberry Pancakes.  This year we made Huckleberry Multigrain Pancakes with Joseph's Grainery Multigrain Pancake Mix and were they ever good, so we thought you might like to try them too...that is, if you're lucky enough to have some huckleberries.

All you have to do is follow the directions on your bag of Joseph's Grainery Multigrain Pancake Mix.  Before you flip the pancakes you'll drop the berries into the batter as it's cooking on the griddle, as seen in the photo below.

Once the pancakes are ready to flip, do so and continue on as you normally would.  Serve with some butter and syrup.  Savor every bite!

Cream Cheese Stuffed Whole Grain Waffles

Whole Grain Cinnamon Waffles Stuffed with Cream Cheese and Smothered with Syrup
On their own, our Joseph's Grainery Whole Grain Pancake Mix makes fantastic regular waffles.  MaMa's gone and outdone herself again and tucked a fun surprise inside these delicious whole grain waffles.  She says that Cream Cheese Stuffed Whole Grain Cinnamon Waffles would be the perfect thing to serve your valentine for breakfast in bed tomorrow.  ;)

Ingredients for Whole Grain Cinnamon Waffles stuffed with Cream Cheese:

2 c Joseph's Grainery Whole Grain Pancake Mix
1 tsp cinnamon
1 1/2 c milk
2 eggs
2 Tbs oil

4 oz cream cheese, room temp
1 1/2 Tbs sugar

Directions:  Plug in and turn on your waffle iron.  Prepare the pancake mix, by combining the mix, cinnamon, milk, eggs and oil.  In a seperate bowl, cream together the cream cheese and sugar.  Pour about half of amount of waffle batter that you'd typically pour on your waffle iron.  Place about a tablespoon of the cream cheese mixture on top of the batter.

Pour the other half of the batter that you'd typically add, covering the cream cheese.  Close the waffle iron and let it cook.

Let the waffle iron do it's thing, once they are done, smother the waffles with syrup and enjoy!

We got our inspiration for this post from a recipe we saw on Cheeky Kitchen.

Multigrain Pancakes with Fruit Compote

Joseph's Grainery Multigrain Pancakes smothered with a nut cream and fruit compote.
We love us some Multigrain Pancakes around here, so when MaMa's friend Michelle brought us some fruit compote and a nut cream and suggested we try them on top of pancakes made with our mix, we got pretty excited.  It was delicious!  All we did was make our Multigrain Pancakes as directed on the packaging. Michelle was kind enough to share her recipes for the compote and nut cream, so here they are...

Multigrain Pancakes with Fruit Compote
by Joseph's Grainery

What an amazing way to start your day...multigrain pancakes and wonderful fruit and nut flavors.
Ingredients
    Ingredients for Fruit Compote:
    • 5-6 pieces of fruit (apples, pears, etc)
    • 2 c of dried fruit (raisins, figs, peaches, etc)
    • 2 c apple sauce
    • cinnamon to taste
    Ingredients for Nut Cream:
    • 3 1/2 c walnuts
    • 1/2 c maple syrup
    • 1/4 c water
    • 2 Tbs cocoa powder (optional, but we like it!)
    Instructions
Follow Multigrain Pancake Mix package instructions.
        Directions for Fruit Compote:
        • Cut up the fruit in big chunks and put in a sauce pan. Add the dried fruit and apple sauce. Bring to a boil. Simmer until the mixture starts to break down, about 20 minutes. Serve warm from the stove or store in fridge for 1-2 weeks.
        Directions for Nut Spread:
        • Place walnuts in a blender with the maple syrup and water. Blend for 2 minutes until smooth. Try to add as little water as possible to keep it thick, unless you want it more like a sauce. Store in fridge. We've also been putting this on our toasted artisan bread, and oh, it's good!

        Cinnamon Roll Multigrain Pancakes

Breakfast doesn't get much better than this!  When MaMa saw the Recipe for Cinnamon Roll Pancakes on Purple Chocolat Home I knew it wouldn't be long before she tried them out!  You can't feel too guilty about eating these pancakes, since they are made with whole grains!

Ingredients for Cinnamon Roll Multigrain Pancakes:

        1 - 13.6 oz bag or 2 c Joseph's Grainery Multigrain Pancake Mix
        2 c milk
        2 eggs

        Cinnamon Filling -
        1/2 c butter, melted
        3/4 c brown sugar, packed
        1/2 Tbs cinnamon

        Cream Cheese Glaze -
        1/4 c butter
        2 oz cream cheese
        3/4 c powdered sugar
        1/2 tsp vanilla

Directions:  Mix the pancake mix per the directions on the packaging.  In a separate bowl, mix the butter, sugar and cinnamon together.  Place in a plastic baggie and snip off the corner off.

Over medium heat, pour the batter for your desired size of pancake, then using the homemade piping bag, pipe a swirl onto the batter.  Wait until bubbles have formed on the pancake and begin to pop and then turn the pancake over.

In a microwave safe bowl, melt the butter and cream cheese and stir together.  Whisk in the powdered sugar and vanilla.  Add a little milk to obtain desired consistency.  Pour the glaze over the warm pancakes and enjoy!

Crepes with Joseph's Grainery Multigrain Pancake Mix

Crepes made with Joseph's Grainery Multigrain Pancake Mix

We've been having fun seeing all the things our Joseph's Grainery Multigrain Pancake Mix can do!  In addition to waffles and strawberry shortcake biscuits, DaDa figured out how to make his crepes using the pancake mix!  Now these aren't necessarily the light and fluffy crepes that you may be used to...they are a bit denser, but it's a fun change up to making pancake with the mix.

        Ingredients for Crepes:

        4 eggs
        1/8 c milk
        1 c Joseph's Grainery Multigrain Pancake Mix
        dash of vanilla

Directions:  In a medium bowl, beat the eggs, milk and vanilla together.  Sift the pancake mix into the egg mixture, stirring occassionally.  Once the mixture is combined, using a 1/3 cup measure, pour the batter onto a skillet over medium heat.  Tilt the pan to thinly spread the batter and shape the crepe.  Serve with fruit, syrup, jam, nutella or whatever your heart desires!
