Huckleberry Multigrain Pancakes


We just returned from a week at one of our favorite places - Priest Lake, Idaho.  Besides swimming in the lake and playing on the beach, guess what else we like to do while we visit each Summer?  Eat huckleberries, lots and lots of huckleberries.  This year Dad taught me how to tell if they are ripe enough to eat, so I was always on the look out for huckleberries.

One tradition we have while at the cabin is making Huckleberry Pancakes.  This year we made Huckleberry Multigrain Pancakes with Joseph's Grainery Multigrain Pancake Mix and were they ever good, so we thought you might like to try them too...that is, if you're lucky enough to have some huckleberries.

All you have to do is follow the directions on your bag of Joseph's Grainery Multigrain Pancake Mix.  Before you flip the pancakes you'll drop the berries into the batter as it's cooking on the griddle, as seen in the photo below.

Once the pancakes are ready to flip, do so and continue on as you normally would.  Serve with some butter and syrup.  Savor every bite!
