Substitute for Buttermilk

We've noticed that a lot of whole grain recipes call for buttermilk.  We have to admit, that isn't an ingredient we always have on hand.  So we make a substitution.  MaMa says this is one of her new favorite tricks and she's not sure if she'll ever buy buttermilk again, but that could also be in part to the size bottle of lemon juice that she bought (look at the picture, you'll see what I mean).

Yes, most people have the cute little lemon squeeze bottle in their fridge.  No, we have a gallon jug of lemon juice in our fridge (slight exaggeration).

For 1 cup of buttermilk:
Add 1 Tbsp of lemon juice to 1 c of whole milk and let stand for 5 minutes.  You now have buttermilk (or at least a very close substitute)!
