Strawberry Shortcake Biscuits with Multigrain Pancake Mix

I'm still coming down off my Easter sugar high...anyone else?

In our house, Easter is the official start to Strawberry Shortcake Season!  MaMa thought she'd try something a little different this year - using our Joseph's Grainery Multigrain Pancake Mix to make the biscuits - and guess what?  It was fabulous!

This pancake mix is more versatile than just for making pancakes and waffles!

1/4 c sugar
1/2 tsp baking powder
4 Tbsp butter, cut into small cubes

Directions:  Preheat your oven to 425 degrees.  In your mixer, with the whisk attachment mix all the ingredients together.  Use a 1/3 cup measure to drop the batter into mounds on a greased cookie sheet.  Bake for 16 minutes or until golden.  Top with fresh strawberry and whipped cream.
