Bruschetta with Multigrain Baguettes

So last time MaMa and I were in the kitchen we made multigrain baguettes.  For dinner that evening MaMa served the baguettes with salami and cheese, along with a little olive oil and balsamic vinagerette for dipping and grapes to round it out.  With 3 more of the baguettes to go, we knew we'd be sharing another fun way to fix them up, so without further a-do, here's our recipe for bruschetta:

Ingredients for bruschetta on multigrain baguettes:

3 Tbsp butter
2 cloves garlic, minced
2 medium tomatoes (we like roma tomatoes), chopped
1/2 c feta cheese
1/4 c basil, finely chopped
2 Tbsp, parsley
2 Tbsp olive oil
1/4 tsp salt
1/4 tsp pepper

Directions:  Preheat the oven to 400.  After slicing the baguette, lay all the slices on a baking sheet.  Mix together the butter and 1 clove garlic to create a garlic butter.  Toast the baguette slices for 5 to 8 minutes.  Immediately upon removing them from the oven, give them a nice coating of the garlic butter.

While the baguette slices are toasting, combine the remaining ingredients in a medium bowl and lightly toss to evenly coat all the ingredients.  Once the slices have been toasted and buttered, place a large spoonful of the tomato topping on each slice.  Place on a fun platter and you've got yourself one fancy appetizer.

Cracked Wheat and Sausage Balls

This is a fun appetizer to take to a party.  They are great finger foods and especially tastey when served with some type of dipping sauce.
Ingredients:

2 c mozerella or cheddar cheese, grated
1/2 lb ground sausage, uncooked
3/4 c Joseph's Grainery Soft White Wheat, milled in a blender to a stone ground consistency
3/4 c all purpose flour
2 tsp baking powder
1/4 tsp baking soda
dash of sea salt

Directions:  Preheat oven to 400 degrees.  Mix together the cheese and sausage.  Gradually add the dry ingredients to the sausage mix.  It will be crumbly, but shape it into bite-sized balls.  Place balls on a lightly greased cookie sheet and bake for 15 minutes

Lentil Hummus Recipe

Are you planning a Super Bowl Party or going to someone else's party and need to take something?  Here's a great hummus recipe that you can serve up for your health conscious guests!  Just pair this with some crackers or fresh veggies and you've got yourself a winner!



Ingredients: 

2 c Joseph's Grainery Lentils, cooked
3 Tbsp lemon juice
2 cloves garlic, chopped
4 Tbsp olive oil
2 Tbsp peanut butter
salt, pepper and chili flakes, season to taste

Directions:  Combine all ingredients in blender and blend until smooth.  Season to taste and serve with crackers, pita chips or fresh veggies.
