Dried Plum Squares

MaMa was afraid to call these Prune Squares, figuring the name might scare some of you off, so instead we're calling them Dried Plum Squares.  ;)  MaMa says I've eaten enough of these today to make sure I'll be regular for the rest of the week.  Not sure what that means, but she says this will be a good treat for those of you who had a little too much sugar earlier in the week.
Dried Plum Squares made with Whole Wheat Flour
Ingredients for Dried Plum Squares:

4 Tbs unsalted butter, softened
1 c brown sugar, packed
1/2 tsp salt
1/8 tsp baking soda
1 tsp vanilla
2 eggs
1 c Joseph's Grainery Hard Red Whole Wheat Flour
1 c prunes, pitted and chopped (see below photo for the kind we used)
1 c walnuts, chopped

These were the prunes we used, all we had to do was chop them up.

Directions:  Preheat your oven to 350 degrees.  Prepare a 9x13 pan by spraying it with cooking spray.

Beat together the butter, sugar, salt, soda and vanilla.  Add each egg and then beat in the flour.  Scoop the batter into the 9x13 and spread using your hands.

Bake for approximately 24 minutes and let cool at least 15 minutes before cutting them into squares.
