Whole Wheat Pita Bread and B.L.A.T.

Bacon Lettuce Avacado and Tomato on a Whole Wheat Pita, does it get much better than that?  These Whole Wheat Pitas may become a staple in our house, they were that good!

When MaMa saw the recipe for Whole Wheat Pitas on Meatless Meals for Meat Eaters she got pretty excited and started thinking of all the things she could fill the pitas with.  How do you like your pita bread filled?

Ingredients for Whole Wheat Pita Bread:

2 c all-purpose flour
2 c Joseph's Grainery Hard Red Whole Wheat Bread Flour
1 3/4 c warm water
1 Tbs sugar
2 tsp yeast
1 Tbs extra virgin olive oil or grape seed oil
1 tsp sea salt

Directions:  Place the yeast into ½ cup of warm water and gently stir until it has dissolved and is frothy.  In a large bowl stir the yeast water together with the flours, sugar, oil, and salt with a wooden spoon.  Form a well in the center of the mixture and pour the remaining 1 ¼ cups water into the mixture.  Stir the dough together until you need to use your hands, continue kneading with your hands until it is well combined.
Pick up the dough with one hand, put a bit of oil in the bottom of the bowl and spread it around with your fingers.  Put the dough back in the bowl, then turn it over (as to oil both sides of the dough).  Cover with plastic wrap and allow to rise for 1 ½ hours.

After the dough has risen, divide the dough into 7-8 little balls, then cover again and allow to rest another 20 minutes.

Preheat the oven to 400 and place the oven rack on the lowest position.  MaMa loved using our pizza stone for making these, if you have one, make sure to place it in the oven to preheat as well.

Roll out the dough balls to 7-8 inch circles then place them on the heated cooking surface and bake for about 5 minutes.  The pitas are done when they are cooked through but still puffy and light.

Fill with Bacon, Lettuce, Avacado and Tomato...or whatever you like and enjoy!

  2. I think this would be great with the vegetarian "chicken" salad that I posted today.

    I'm a pretty lazy cook most days, this looks doable and I think I could actually do this! This is much more appealing than buying the bag of dry stuff at the grocery store.
