
Ingredients for Christmas Pinwheel Cookies:
1/2 c butter, softened
2 c Joseph's Grainery Whole Grain Cookie Mix Base
1 c sugar
1 egg
1 tsp vanilla
2 Tbsp milk
1 tsp lemon juice
red and greed food coloring
Directions: In the bowl of your mixer combine the butter, cookie mix and sugar until they resemble fine crumbs. Add the egg, vanilla, milk, lemon juice and mix on low speed for about a minute.
Divide the dough into 2 halves. Color one half red and the other half green. On a well floured surface roll out both portions until the are about 1/4 inch thick. Place one color on top of the other and roll into a pinwheel. Place the log in the fridge for 2 hours to chill.
Preheat the oven to 350 degrees. Take the dough out of the fridge and slice off cookies that are 1/2 inch thick. Place them on a greased cookie sheet and bake for about 8 minutes.

ReplyDeleteAfter I wrapped all of the presents, my little girl was beside herself with excitement, so I let her put them under the tree all by herself. She got to touch each one and ask who they were for. She hasn't touched them since, but sometimes she points to one and asks who it is for. Other times she will ask how many of them are for her. Christmas is such a joy to watch through a young child's eyes.
