Congratulations on being featured like that. I enjoyed reading the background story of your business. I was listening to NPR the other day and heard that wheat prices had soared because of the Russian wheat crop problems. It must be so hard to have your livelihood be so volatile. I think you made a wise choice to get into the direct consumer market. You certainly have a darling "front man."
Congratulations! That is great! And I really enjoyed reading the story behind your company. And to respond to your question about the focaccia - I have made it with half whole wheat flour before and I'm fairly certain that full whole wheat would work fine with some adjustments.
