Whole Wheat Banana Cookies

I don't like bananas, so I'm not sure why MaMa keeps buying them, cause the just sit there and turn brown and gooey on her.  She's always trying to find new ways to use the over ripe bananas, as we always seem to have an ample supply of them.  She says she's tired of making banana bread every week, so she thought she'd try something different.  She thought you might like the try these cookies too, because, according to her, everyone has over-ripe bananas every now and then.

Ingredients:
2 1/2 c Joseph's Grainery Soft White Whole Wheat Pastry Flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
3/4 c sugr
2/3 butter, softened
2 eggs
1 1/2 tsp vanilla
3 over-ripe bananas
1 c chocolate chips
1/2 c shredded coconut
1/2 c walnuts, chopped


Directions:
Preheat the oven to 375 degrees.  In your mixer, mix together the butter, eggs, vanilla and sugar.  Then mash and add the bananas.  Gradually add the dry ingredients to the mixer.  Once well combined, stop the mixer, remove the bowl and fold in the chocolate chips, coconut and walnuts.  Spoon onto a lightly greased cookie sheet and bake for about 10 minutes.
