No-bake Peanut Butter Wheat Berry Crunch Bars

Oh boy, are these ever a sweet and crunchy treat!  MaMa served these at my birthday party a few weeks ago and they are quickly becoming a family favorite!  I think it's fun that the recipe incorporates both the whole wheat berries and the whole wheat flour.  Can't get much healthier than that, right?  Well, until you add the 3 sticks of butter, then they may not be so healthy, but they sure taste good.  Butter makes everything better, right?

Ingredients:1 3/4 c powdered sugar
1 1/2 c butter, softened
1 tsp vanilla
3 c Joseph's Grainery Hard Red Whole Wheat Flour
1/2 cJoseph's Grainery Hard Red Wheat Berries , cooked
2 Tbsp honey
1 c peanut butter, crunchy

chocolate topping - 
2 c semisweet chocolate chips
1/4 c peanut butter

Directions:
Line  a 9x13 pan with foil.  In a large bowl, mix the sugar, butter, vanilla, 1 c peanut butter and honey.  Then add the flour and wheat berries.  Mix until smooth.  Press the mixture into the 9x13.


In a saucepan, over medium heat, melt the chocolate chips and remaining peanut butter. Stir until smooth.  Pour over the bar mixture and spread to cover the entire 9x13 smoothly.



Cover and refridgerate for at least an hour.  Remove from fridge and cut into bars.  Refridgerate another hour or until firm.  Serve of store for up to a week in an air tight container.
