Mint Double Chocolate Cookies

We figured you might need a chocolate pick-me-up after all of the holiday shopping you'll be doing (or have already done) today. These Mint Double Chocolate Cookies definitely fit the bill...and with a touch of mint they have a bit of holiday flavor!




These cookies are simple enough you can let the kids help with them, just like MaMa let me help make these cookies! Yes, I'm a messy baker.




Ingredients for Mint Double Chocolate Cookies:

1/2 c shortening
1 1/8 c Joseph's Grainery Whole Grain Cookie Mix Base
2/3 c sugar
1/2 c baking cocoa
1 egg
1/2 tsp mint extract
1/2 c mini chocolate chips

Directions: preheat your oven to 375 degrees. In the bowl of your mixer, combine the shortening, cookie mix and sugar until it resembles fine crumbs. Add the cocoa, egg and extract and mix on low for about a minute. Stir in the mini chocolate chips.

Form one inch balls and place on a greased cookie sheet. Bake for 8 to 10 minutes.
