Blackberry Breakfast Bars

MaMa is having fun finding was to incorporate all of those blackberries we picked.  She's even froze some so we can have one of her cobblers (found here) at a later date.  She saw this recipe awhile back and has been looking forward to trying it when blackberry season rolled around.  I can't wait for breakfast this morning!  I've been eyeing these yummy looking bars since yesterday, but MaMa said we had to wait for breakfast.


Ingredients:

4 Tbsp butter, softened
1/2 c brown sugar
1 egg white
1/3 c applesauce
1 c rolled oats
1/4 c flax seeds (optional)
1/2 c blackberry preserves (another berry preserve can be substituted)
1 handful blackberries, squished

Directions:  Preheat the oven to 350 degrees.  Cream together the butter and sugar.  Add egg whites and applesauce.  Add the flour, oats and flax seed.  Then spread half of the batter over a greased 8x8 pan.  Spread the preserves over the batter and then sprinkle the squished blackberries.  Top with the remaining batter and bake for 25-30 minutes.  Let cool completely before cutting or bars will crumble.
