Wheat Biscuits

There isn't anything much better than a hot biscuit just out of the oven, with a little bit of butter and jam.   Yummmm!  Here's a fool proof biscuit recipe that we love:

Wheat Biscuits

Ingredients:

1 1/3 c Joseph's Grainery Soft White Wheat, milled into stone ground flour in your blender
1 1/3 c all purpose flour
1/4 tsp baking soda
1 Tbsp baking powder
dash of sea salt
1 1/3 c buttermilk (don't have butter milk - add 1 Tbsp of lemon juice for every cup of milk, stir and let stand for 5 minutes - now you have buttermilk)

Directions:  Preheat oven to 450 degrees.  Place the dry ingredients in a large bowl, add the buttermilk and mix thoroughly.  Drop spoonfuls into a lightly greased muffin tin and bake for about 12 minutes (or until the tops are a nice golden brown).  Or you can roll the dough out and cut out the biscuits, but we prefer to not go to all the work and mess, we just use the muffin tin.  :)
