Cracked Wheat Cupcakes

These cupcakes are a fun and yummy way to get your kids to eat whole grains...especially at a party!  They don't taste as sugary as a typical cupcake, but the kiddos still eat 'em up.

3/4 c Joseph's Grainery Soft White Wheat, milled in blender to a stone ground consistency
3/4 c all purpose flour
2 tsp baking powder
1/4 tsp baking soda
dash of sea salt
2/3 c sugar
1/2 c milk
1 egg, beaten
1/4 c oil
1 tsp vanilla

Directions:  Preheat oven to 375 degrees.  In bowl stir together dry ingredients. Add the liquid ingredients and mix well.  Fill a muffin tin with paper cups and fill each cup approximately 2/3rds full.  Bake for 15 minutes.  Let cool before icing.
