Lemon n' Wheat Cookies

Here's another halfway healthy cookie that mom doesn't feel too bad about letting me nibble away at.  As you can tell from the photo, I can't wait to get my hands on them!


Ingredients:

3/4 c butter, softened
3/4 c sugar
1 large egg
4 Tbsp lemon juice
1/4 c shredded coconut
1 c all purpose flour
1 c Joseph's Grainery Soft White Wheat, cracked in blender to a stone ground consistency
1/4 tsp baking soda
1 Tbsp baking powder
1/2 tsp sea salt

Directions:  Preheat oven to 375 degrees.  Cream together the butter and sugar.  Add the egg, lemon juice, and coconut and beat well.  Gradually add the dry ingredients and mix well.  Drop spoonfuls of dough onto a lightly greased cookie sheet and bake for 10 minutes.
