Baked Wheat Pudding

Looking for a somewhat wholesome dessert to satisfy that sweet tooth?  This recipe resembles a bread pudding, of sorts.  It's definitely worth a try.  We really enjoyed it!


2 c milk
3 eggs, slightly beaten
1 1/2 c Joseph's Grainery Soft White Wheat Berries, cooked and then finely chopped in the blender
1/2 c raisins
1/2 c brown sugar, packed
1 Tbsp granulated sugar
1  tsp cinnamon
1/2 tsp sea salt
dash nutmeg
1 tsp vanilla

Directions:  Preheat the oven to 350 degrees.  In a medium bowl, mix the milk, eggs, sugar, cinnamon, nutmeg and vanilla.  Add chopped wheat berries and raisins; stir.  Pour into an 8x 8 inch baking dish and bake for 30 minutes.
