Whole Wheat Apple Cider Spice Cake 
I'm so excited about the apples growing on our apple tree outside that I've been making MaMa check the apples each day to see if they are ready yet.  She said it would be a little while still, so she made me this Whole Wheat Apple Cider Spice Cake to tide me over until our apples are ready!

Don't blame the wonky back side of the cake on MaMa...that's my fault.  I couldn't keep my fingers out of it and had to sample some before MaMa had a chance to take her photos.  Sorry MaMa!

Ingredients for Whole Wheat Apple Cider Spice Cake:

1 c butter, softened
2 c brown sugar, packed
1 1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp ginger
4 eggs
2 1/2 c Joseph's Grainery Hard Red Whole Wheat Bread Flour
1/2 c apple cider
1/2 c walnuts, chopped

for the glaze:
2 Tbs butter
1/2 c sugar
1/3 c apple cider
1 Tbs lemon juice
1/4 tsp ginger

Directions:  Preheat your oven to 350 degrees.  Prepare a Bundt pan with cooking spray.

In your mixer, beat together the butter, sugar, baking powder, salt and spices.  Add one egg at a time and beat until smooth.  Gradually add the flour, alternating with the apple cider.  Mix in the walnuts and ginger.  Pour into the prepared Bundt pan and bake for about 45 minutes, or until a tooth pick inserted into the middle comes out clean.

Let the cake cool about 15 minutes before removing from the Bundt pan.  During this time mix the ingredients for the glaze in a saucepan and bring to a boil, making sure to melt the butter.  Brush the top of the cake with the warm glaze, continue adding the glaze until it's all been soaked up.
