Wheat Berry Breakfast Hash


Wheat Berry Breakfast Hash spiced up with some Peri Peri Sauce.
We like having breakfast-for-dinner at our house and MaMa and DaDa have a new favorite hot sauce to put on their Wheat Berry Breakfast Hash - Peri Peri Sauce.

Peri Peri Hot Sauce
If you're a Washington State Cougar fan, chances are you've probably had breakfast at Old European in Pullman.  And Chances are, if you've eaten at Old European and you like your food a lil' spicey, then you've enjoyed some of their Peri Peri Hot Sauce.  They now sell their Peri Peri Hot Sauce online and in their restaraunts!

When we got a bottle of their hot sauce to try, we new we'd definitely have to try with a Wheat Berry Breakfast Hash and everyone thought it was might tastey!

Ingredients for Wheat Berry Breakfast Hash:


2 lbs small red potatoes, quartered or cut into eighths
1/4 c Joseph's Grainery Hard Red Wheat, cooked
4 Tbs olive oil
2 Tbs dried rosemary
6 eggs, scrambled
bacon, chopped into small pieces (optional)
salt and pepper to taste
Peri Peri Hot Sauce to taste

Directions:  Preheat your oven to 400 degrees.  Toss the cut potatoes in the wheat berries, olive oil, rosemary and some salt and pepper.  Place the potato mixture on a large baking sheet in a single layer.  Roast for 20 minutes at 400 degrees.  Turn all of the potatoes with a spatula and roast for another 20 minutes.

Meanwhile scramble the eggs and cook the bacon.  When the potatoes come out of the oven, you can dish up your wheat berry breakfast hash how ever you wish - we like it all in one big heap as pictured above.  Add the Peri Peri Hot Sauce and any additional salt and pepper that you desire.
