Chocolate Chip Cookie Dough Cheesecake Bar

MaMa and I figured with it being Friday and all, that it was time to post a sweet treat, and boy, are these Chocolate Chip Cookie Dough Cheesecake Bars a treat!  Part cheese cake, part cookie dough, these little guys are some gooey goodness!  When MaMa saw the recipe for these on Frugal Antics of a Harried Homemaker, she knew she just had to try them.  Grandpa and Grandma were visiting when we made these and I caught Grandpa sneaking the last bar for breakfast the next morning.  :)


Why does my mouth always start watering when I'm writing these posts?  Anyways, here's the recipe with our whole grain twist...

Chocolate Chip Cookie Dough Cheesecake Bar Ingredients:

crust - 
1 1/2 c graham cracker crumbs (bonus points if you make your own graham crackers)
5 Tbsp butter, melted

filling - 
10 oz cream cheese
1/4 c sugar
1 egg
1 tsp vanilla

dough - 
1/2 stick butter
1/4 c brown sugar
3 Tbsp sugar
1/8 tsp salt
1 tsp vanilla
3/4 c chocolate chips

topping - 
2 Tbsp chocolate chips, melted

Directions:  Preheat your oven to 350 degrees.  Combine the crumbs and melted butter.  Press into a greased 9x9 pan.  Bake for 6 minutes.  Decrease the oven temp to 325 degrees.

While the crust is baking, in a mixer, combine the cream cheese and sugar.  Then add the egg and vanilla.  Make sure it is well mixed and then pour onto the crust.

In the same mixing bowl, cream the butter and sugars.  Add the salt and vanilla, then add the flour.  Fold in the chocolate chips.  Drop the dough in chunks over the filling.  Bake for 30 minutes or so.   After they are done baking drizzle the melted chocolate over it with a fork.  Let cool.
