Hot Cocoa Cake

Hot Cocoa in July?  Are we crazy?  Maybe a little, but it sure is yummy.  This is the perfect dessert if you're looking to quickly satisfy a sweet tooth craving or for when you have unexpected dinner guests.  If you have cute glass mugs, they make for an even better presentation.  After two minutes in the microwave we topped it with cream cheese frosting and hot fudge sauce.  Talk about hot, gooey whole grain goodness!  It's like you're eating hot cocoa, only better.  They smelled so good that MaMa forgot to take a picture before we started digging in...so that's why there are a few bites missing in the photo above.

Ingredients:


9 Tbsp Joseph's Grainery Soft White Wheat Pastry Flour
9 Tbsp sugar
4 1/2 Tbsp cocoa powder
2 medium eggs
7 Tbsp milk
4 1/2 Tbsp vegetable oil
1 1/4 tsp vanilla
Directions:   Mix all ingredients together in a small bowl. Pour into 4 mugs. Microwave each mug for 2 minutes. Top with hot fudge sauce, chocolate sauce or cream cheese frosting. Enjoy!
