Wheat Berry Meat Loaf

This week we're sharing a few recipes that our friend Dorothy from Ritzville, Washington has shared with us.  They are recipes that she developed for an agribusiness that she and her late husband used to run in the Ritzville area.  This is the front of their brochure:
The first recipe we want to share with you is the Wheat Berry Meat Loaf.  If you're looking for a healthy dinner idea, here's a great one!  It's pretty simple and has very few dishes to clean up afterwards...we like that!


Ingredients:

1 egg
1 1/2 c milk
1 small onion, chopped
1/4 c catsup
2 lbs ground beef (we used ground turkey)
1 clove garlic
2 tsp salt (we only used 1 tsp salt)
1/8 tsp pepper (we used 1/2 tsp...we like pepper...can you tell?)

Directions:  Preheat oven to 350 degrees.  Mix all ingredients together.  Bake in a 2 quart casserole or loaf pan (we even mixed it together in our casserol dish...we're all about dirtying less dishes!).  Bake for 1 hour at 350 degrees.
