Eve's Apple Cake

This cake is delicious!  If you're looking for a coffee cake type recipe, this is fast becoming a family favorite for us.  Besides the two cups of sugar it calls for, this recipe is pretty healthy.  This is some what of a "teaser", as the recipe calls for Joseph's Grainery Flour, so keep checking back here for the big reveal...we should be able to make the announcement sometime soon!
Yes, we have to admit...we forgot to take a picture of the cake after we took it out of the oven.  It was so yummy that we forgot all about taking the photo, so this is the picture from the cookbook where we got the recipe (for info see credits below).

Ingredients:

3 c Joseph's Grainery Hard Red Whole Wheat Flour
2 c sugar
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 1/4 c light vegetable oil
3 eggs
3 c diced apples
1 c chopped nuts
1 c chopped raisins (or craisins)

Directions:  Preheat the oven to 350 degrees.  Lightly grease a 9 x 13 pan.  In a large bowl, whisk together the flour, sugar, baking soda, salt and cinnamon.  In another bowl, place the oil, eggs, diced apple, nuts and raisins.  Mix slightly.  Mix the dry ingredients with the wet only enough to moisten.  Lightly spread the batter evenly into the prepared pan.  Bake in the fully preheated oven for 1 hour.

  1. If there is any recipe better than a common apple pie, this must be it. I like the idea of having nuts and raisins in it.
