Mexicali Surprise Casserole

We've been snacking on this since we made it a few nights ago!


2 1/3 c dry Joseph's Grainery Lentils
5 c water
2 t salt
1 lb ground beef
1 15 oz can Salsa
1 t oregano
2 c shredded carrot
1/2 c sliced black olives
2 c shredded mozzerella cheese

Directions:  In a saucepan, combine lentils, water & salt. Bring to boil, cover & simmer 30 min. Do not drain. Brown ground beef, drain off fat. Add to lentils along with salsa, oregano & carrots. Turn into 9 x 13 baking dish. Sprinkle w olives & cheese. Bake 350 for 30 min. (You can also add more spices and jalapenos to make is spicier). Eat as a dip with chips.
