Spicy Wheat Casserole

We wanted something hearty for dinner last nigt, but nothing that was too time consuming or difficult to make.  This casserole fit the bill and was fairly simple to make!  We will gladly eat the left overs for lunch today!


Ingredients:

1 lbs ground beef
1 chopped onion
1 c Joseph's Grainery Soft White Wheat, uncooked, cracked
1 tsp each - thyme, oregano, garlic powder
1 bay leaf
1 1/2 tsp salt
1/4 tsp pepper
1 can cream of mushroom soup
1 16 oz can tomatoes
4 slices cheddar cheese

Directions:  Crack 1 cup of Wheat in your blender or food processor.  Brown meat, add onion and cook until tender.  Add cracked wheat and brown for one minute.  Stir in seasonings, soup and tomatoes.  Bring to a boil and cook 20 minutes, stirring occassionally. Set your oven to broil.  Pour into a 9x9 baking dish, top with cheese and place under broiler until cheese bubbles.
