Mexican Casserole

Here's yet another yummy (and fairly simple) dinner idea.  For all you bacon lovers out there, this one is for you!


1 c Joseph's Grainery Soft White Wheat, cracked
1 can diced tomatoes
1 red pepper, chopped
1/2 c water
1 yellow onion, chopped
1 tsp salt
1 tsp chili powder
1 tsp garlic salt
4 strips of bacon, quartered
1 c cheddar or pepper jack cheese, shredded

Directions:  Preheat oven to 350 degrees.  Crack 1 c of Soft White Wheat Berries in your blender or food processor.  Combine all ingredients except bacon in a 9x9 inch baking dish.  Arrange bacon pieces on top.  Bake at 350 degrees for one hour, when 10 minutes or so remain, sprinkle shredded cheese on top and return to oven to finish baking.
