Wheat n' Jam Cookies

Yet another great cookie recipe for your holiday baking.

1/2 c butter
3/4 c brown sugar
1 egg
1 tsp vanilla
1 1/2 c flour
1/3 c Joseph's Grainery Soft White Wheat, cooked and cracked in a blender or food processor
1/2 tsp salt
1/4 tsp baking soda
1 c walnuts, finely chopped
Jam, Jelly, Pumpkin Butter, etc
Directions:  Preheat oven to 350 degrees.  Cream together the butter, brown sugar, egg and vanilla.  Add flour, wheat berries, salt and baking soda.  Form 1 inch balls of cookie dough and roll in finely chopped walnuts.  Place on an ungreased baking sheet.  Bake 10 minutes  Remove from oven and make an indentation in the center of each cookie (we used the bottom side of our measuring 1/2 tsp).  Place a small amount of preserve into the indentation.  Bake for an additional 3 minutes.

We used a rasberry jam and a pumpkin butter, both had great flavors and really gave the cookies a different taste.
