Applesauce & Wheat Berry Cake

Looking for a moist cake recipe?  This one is divine!  It's gotten rave reviews from the whole family.


1/2 c butter
1 c sugar
2 eggs
2 c applesauce
2 c flour
1/2 c Joseph's Grainery Soft White Wheat, cooked and cracked in blender or food processor
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/4 tsp ginger
Directions:  Preheat oven to 350 degrees.  Cream together the butter, sugar and eggs.  Alternate adding the dry ingredients (flour, wheat berries, baking soda & powder, salt cinnamon and ginger) with the applesauce.  Beat for 2 minutes.  Pour into a greased and floured bundt cake pan.  Bake for 50 minutes (or until toothpick comes out clean). 

Broiled Topping:

1/4 c butter, melted
1/2 c brown sugar
1/2 c oatmeal
1/2 c walnuts, chopped
2 Tbsp milk
Directions:  Mix together all ingredients and spread on top of cake.  Broil in the oven for 3 minutes, so that it is lightly browned.
