Sausage Lentil Soup

Another great recipe for a chilly Fall day!
Ingredients:
  • 2 1/3 c uncooked Joseph's Grainery Lentils
  • 2 links Kielbasa or Polish sausage
  • 1 - 46 oz can V-8 juice
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 3 carrots, sliced
  • 1 large can tomatoes
  • 1 potato, diced
  • 2 bay leaves
  • 1/2 tsp thyme
  • 1/2 tsp garlic powder
  • 1 tsp basil
  • 2 tsp salt
  • pinch rosemary
  • 4 c water
  • fresh ground pepper
Directions: Wash lentils. Bring liquid to a boil, add lentils and sausage and simmer one hour. Add all ingredients except pepper If too thick add water. Simmer another hour. Add pepper and 1 Tbls vinegar before serving.
